- You’ll be staying in a spectacular 19th-century military fortress carved straight into the rock. From the sea it’s almost invisible, and you move around via old moats and atmospheric passageways. The most exclusive suites occupy former cannon positions, offering a level of privacy that’s genuinely hard to come by around the Mediterranean – ideal if you’re after peace and quiet.

- Its remote setting means longer journeys into Palma and to other restaurants. You may find yourself relying on the hotel’s dining, which can start to feel a touch limited on longer stays.
